~ Finnocchiona ~ $15
'Finocchio' is the Italian word for fennel, the seeds of which are toasted and added to this most loved Tuscan pork salame. This classic is flavored with red wine and black pepper and produced with all natural, hormone & antibiotic-free pork. We dry our Finocchiona for a minimum of 6 weeks. Slice thin and serve. You will receive approximately 1 pound of meat. $15
~ Soppressata ~ $15
This spicy, dry-cured salame owes its origin to the Calabrian region of Italy. It is coarse-ground from the highest quality pork and mixed with white wine, garlic and spices before drying. We dry our soppressata for minimum of 6 weeks. Slice thin and serve. You will receive approximately 1 pound of meat. $15
~ Summer Sausage ~ $12
This smoked beef and pork sausage is the perfect holiday gift. Seasoned with black pepper and mustard seeds, then smoked with hickory wood, it is best when sliced thick and eaten with good cheddar. You will receive approximately 1 pound of meat. $12
~ Chorizo ~ $15
This dried sausage gets its distinctive smokiness and deep brick- red color from ‘pimenton’ or smoked paprika (sweet and spicy). Our version is modeled after those found in and around Pamplona, Spain, where the meat is finely ground and the sausages are thicker in diameter. Great for cooking and/or slicing for sandwiches. You will receive approximately 1 pound of meat. $15
~ Pepperoni ~ $15
We dehydrate fresh red bell peppers to give this classic its characteristic sweet flavor. It is made from local Wisconsin beef and Illinois pork. Our pepperoni is certainly an ideal topping for pizzas, but is also great in sandwiches, salads and pastas. You will receive approximately 1 pound of meat. $15
~ Prosciutto ~ $260
Prosciutto is a dry-cured ham that elicits a reverence perhaps unmatched by any other single charcuterie item. By dry-cured ham, we mean the whole back leg of a mature, organic Illinois hog packed in salt for weeks, then rinsed and hung to dry for many months. Our Prosciutti takes 15 months to fully mature. Reserve yours now! We will send you periodic updates on the status of your Prosciutto during the aging process. You will receive approximately 15 pounds. $260

Our fully-cooked and ready-to-serve Heirloom smoked hams make a quick and easy centerpiece for any meal or special occasion.
This exceptional smoked ham is tender, juicy and full of flavor. Handcrafted from Midwestern Berkshire pork, our hams are seasoned with maple and brown sugar and slow-smoked over local cherrywood. Your ham will be approximately 7-8 pounds.
